"Gender matching" allows you to restrict the genders that are able to meet each other. The most common use case for this is to enforce a heterosexual speed dating event. Another example might be an LGBTQ speed dating event requiring men to meet men, and women to meet women.
Most event organizers do this for logistical reasons, especially as their events grow in size.
